Chocolate Chip Banana Muffins (You Can Make Them Vegan!)

Since it's a weekend, i decided to write a recipe post, so you would have time to make these muffins if you want to. These cupcakes are versatile. You can easily make them vegan, no eggs or milk used! And this isn't 100% healthy, but it's definitely a healthier version of normal chocolate chip cupcakes

Cupcakes, Muffins, Chocolate, Food
Today we're making these!
YOU WILL NEED:
  • Flour - 3/4 or 1 full cup
  • Sugar (i used brown, but you can also use stevia) - 1/2 cups or 2tb spoons - depends on how sweet you want your cupcakes to be
  • Cocoa powder - 3 tbs
  • Salt - 1/4 tea spoon
  • Baking powder - 1/2 ts
  • Water (you can use milk, but i just wanted to reduce calorie, still tasted amazing) - 1/2 cup
  • Oil of your choice - 75 ml (which is about 15 ts)
  • Vanilla extract - 1 ts
  • Chocolate chips - 1/2 cup
  • One ripe banana
WHAT TO DO:
  1. Preheat your oven to 180C (356F)
  2. Sift the flour. Mix all the dry ingridients apart from chips. Mash up the banana. In separate bowl mix the wet ingridients very thoroughly. Then mix it all together and add chocolate chips.
  3. Spray your muffin tins and spread the batter in there.
  4. Bake for about 25-30 minutes. Eat them cooled.
Keep in mind, that this amount of ingridients makes about 7 mini-muffins, so if you want to make the whole muffin tin of this muffins, double the recipe! (Not every single ingridient. Double flour, water, chocolate chips and add 1/2 cup of sugar and 4 tbs of cocoa powder + you'd better use very big banana or two small ones)

In case you're not a fan of banana taste, use 1 1/2 cup of flour, 1 cup of water and 1/2 or 3/4 cup of sugar

Here are some pictures of my cooking process + some tips:)

That's how your batter suppost to look like
Don't forget to spray with oil muffin tin, so the cupcakes won't stick
But if you're using this paper muffin tins too, then don't spray anything
As you can see here, a poured some water in empty forms. That will help to keep your muffin tin in a good condition for much longer
Bon appetit!
